The pineapple is coming!

As November comes to an end, the rains are already beginning to have a different “smell” of wet earth and the colors, everywhere, are starting to get more vibrant… Christmas decorations appear from the windows, beautiful fruits and vegetables on display in supermarkets and vegetables, summer clothes coming out of the closet and the sun rising “earlier”.

And with all that, our taste buds are also giving way to more refreshing, succulent foods and, of course, pineapple enters the scene. Considered the king of fruits for having a crown, it is produced by the plant with the same name of the bromeliad family, it is a symbol of tropical and subtropical regions, widely accepted worldwide, both naturally and industrially. November begins its harvest and will be abundantly found for a good 3 months, enjoy!

Fresh pineapple has a low amount of calories per serving (100g = 48kcal), it can help a lot in satiating those looking for weight loss, but it can also be a great ingredient for preparations such as jellies, juices, ice cream, sweets, cakes and even as an accompaniment to a good roast, such as pork loin, which goes very well with Christmas dinner (check out this tip).

Well, there are several recipes with pineapple, sweet and savory, but there are two that delight me in an inexplicable way and this week I’m here to share one of them with you:

Coleslaw salad with pineapple

Ingredients
3 cups (tea) of cabbage cut into thin strips
2 cups (tea) of red cabbage in thin strips
1 small red onion, thinly sliced
50 g of chopped green olives
2 cups (tea) of pineapple (fresh) cut into cubes
1 lemon juice
½ cup chopped parsley and chives
1 box of sour cream
Olive oil to taste
Salt, oregano and black pepper to taste

Method of preparation
After sanitizing and cutting, mix everything in a bowl. Let it cool for an hour before serving.

Tips:
– Add roasted pumpkin seeds or roasted sesame seeds or even almond chips, it’s very good.
– Serve with grills, such as salmon or chicken. Also pairs with roasted pork.
– It is optional to add a cup (tea) of apple without the skin and cut into strips or carrots also in strips, it is more nutritionally rich and delicious.
