Sweet pineapple, well…
A promise is a debt and that’s why I came back!
Did you know that pineapple is considered a symbol of hospitality? For ancient peoples, placing a pineapple outside the house is a sign that visitors are welcome. So here we go, because today’s recipes are sweet, perfect for receiving someone you love (with care and precautions, the pandemic is not over) and make that affection in the form of food.
Flammed pineapple with coconut ice cream
Ingredients
1 pineapple
1 ½ tablespoon of butter
3 tablespoons of sugar
⅓ cup rum tea
Coconut ice cream to serve
Coconut chips burnt to taste to serve
Method of preparation
Peel and cut the pineapple into rounds of about 1.5 cm, remove the kernels if you like, but not necessary. Place the butter in a skillet, when it melts, lower the heat, add the pineapple, sprinkle the sugar and grill well on one side, turn and grill well on the other. Keep the skillet on low heat and light another stove flame. Place the rum in a ladle, bring it close to the flame and let it heat up. Slightly tilt the ladle so that the rum catches fire and drizzle the flaming drink over the pineapple. Let it smolder until the fire goes out, the rum flavors the pineapple and the alcohol evaporates with the fire. Transfer the pineapple, with the syrup, to a serving dish and then serve it with coconut ice cream and burnt coconut chips.
Pineapple jam with orange and ginger
Ingredients
1 pineapple
3 tablespoons of sugar
2 oranges (juice only)
1 piece of ginger (+/- 3 cm)
1 piece of cinnamon stick
Method of preparation
Peel, cut and chop the pineapple into cubes of about 1.5 cm, remove the crumb if you want, but not necessary, set aside. In a saucepan, place the sugar and let it melt, at a caramel point. Very carefully, as it may sneeze, add the orange juice, chopped pineapple, grated ginger and cinnamon stick.
Let it cook over medium/low heat for about 15 minutes, stirring constantly to avoid sticking. It will form a syrup, the ideal is that it is not too “thick” but in a syrup point, because when stored in the refrigerator, the tendency is to become even thicker. Allow to cool, remove the cinnamon stick and place in a pot. Serve warm or iced with ice cream, cookies, bread, tartlets.
