Oat Pancake with Banana
Unsurprisingly the banana is the darling of Brazilian fruit. Ingredients:
Pasta
1 banana silver (can be nanica)
1 tablespoon (soup) of oats thin flakes (can be whole oats or oatmeal)
1 tablespoon (soup) lactose-free milk (can be normal milk, yogurt or water)
Ghee (clarified butter without lactose) or oil of your choice
Accompaniments:
1 Brazil nut
1 cashews
1 banana silver (or dwarf)
MeI (molasses or sugar cane) *
Yogurt (lactose or normal)
oatmeal
* When using honey, check the origin and always try to use pure honey (raw).
Method of preparation:
Mash the banana with a fork, mix 1 tablespoon of oatmeal and 1 milk. Stir well to form a uniform mass. In a heated non-stick pan, put the ghee or oil wire (try with coconut oil) and gently depositing an mass spoon to go slowly spreading to form a ball (+/- 5 cm in diameter), let grilling well until golden brown and carefully turn with a spatula. Repeat until you finish the dough.
Serve them on a plate, covered with honey and willing to side of other side dishes.
Tips: Can be made a single pancake, stuffed with honey and chopped banana. Roll or fold as crepe. Or use molds as heart, star, half moon, because this way more please children.
