What does privilege mean to you? To be privileged?
Time has taught me that there are many ways to be privileged, to have privileges, one thing or another or everything, that others don’t have.
Having food on the table, for at least 3 meals, is a privilege, yes, but it’s not just having it. Knowing how to make it is also important and is a privilege.
Being a cook has given me several privileges, such as making at home, in a more affordable way, foods that many people buy in restaurants, bakeries, supermarkets…
Being a nutritionist has helped me improve the food I prepare, make it more nutritious, and not depend on ultra-processed foods to have a pleasant and palatable meal.
I know I am privileged in this aspect and it is something I will not give up. But I want to make it clear that, in a rush, sometimes I do buy it and that’s okay.
Making my Italian bread, with the certainty that it only has flour, yeast, salt and whey. Yes, that is a huge privilege. Leftover whey from my cottage cheese, which only has milk and lemon to curdle.
The golden banana jam only has bananas “given” to me by a cousin, which were picked on his land, and lemon, and the patience to stir over low heat, of course.
Three types of fruit for breakfast? Yes! A privilege… And look, breakfast has never been my strong point, to this day I make a huge effort to make it enjoyable.
My childhood dream was that the world would be or would remain at peace, that everyone would have food on the table, just like I always have, and I swear that’s not demagogy.
It’s still my dream…
