This site has plenty of tomato sauce recipes to choose from… But this isn’t just any sauce.

Having two autistic children, with different tastes, different sensory disorders and different food selectivities, and also being a nutritional therapist for people with food selectivity and other issues, allowed me to have a range of possibilities and create recipes that were sustainable and made mealtime more enjoyable or less challenging.

The multi-purpose tomato sauce that I currently use is a nutritious sauce, full of fiber and that helps to overcome some of the issues I mentioned above. Ideal? Maybe not, but we live in a real world, where putting together a colorful plate full of vegetables is not always within everyone’s reach, no matter their reasons.

Tomato and vegetable sauce

Tomato sauce with more fiber

Ingredients:

– 2 large tomatoes

– 1 zucchini

– 1 carrot

– 1 onion

– 1/2 medium beetroot or 1 small whole beetroot

– 2 cloves of garlic

– 1/2 bell pepper

Preparation method:

Clean and peel the vegetables, except the tomato, cut into medium pieces and place them all in a blender with 500ml of water. Beat well until smooth and place in a large pan, cook well until you notice that the vegetables are well cooked. Add the seasonings you want, I always add sweet paprika, oregano, salt (a little) and black pepper, and also a spoonful of margarine of your choice. It becomes a thick, silky sauce, similar to a rustic paste. Store in jars, preferably glass, sterilized with boiling water. This amount of vegetables with the amount of water I put in ingredients, yields 600ml to 750ml, depending on the size of each one. If you want to make more, double the recipe, it lasts in the refrigerator for 10 to 15 days, if stored well.

Tips:

– If you have chicken or vegetable broth, you can use it instead of water, it tastes better.

– If you have whey stored, you can also use it instead of water (a while ago I taught you how to make cottage cheese and the whey is usually thrown away, but it is rich in protein – the famous whey protein – and can be used in several recipes).

– Use your creativity and add other vegetables, such as pumpkin, broccoli, eggplant.

– To use in preparations such as Bolognese sauce or stroganoff, simply add the desired amount and add water to make it like a regular sauce and adjust the seasoning.

Again, we live in a real world where the ideal is not always possible, so take advantage of opportunities.
